Final 10/15% out of the press from Blanc de Noirs production, on skins for 4-6 hours. Fermentation in stainless steel and concrete egg, aged on gross lees for 6 months minimum. Natural MLF, no filtration, no fining, may receive a small addition of SO2 at bottling.
